Cañocazo

An old white variety of Andalusia, known in Jerez as Mollar Blanco and listed in old Andalusian ampelography as “Cañocazo Mollar blanco”. It is vigorous, with plentiful bunches of large, golden, freckled berries that give a very sweet must with a fine aroma; it was sometimes used to lift the aroma of Pedro Ximénez. It was authorised in the Jerez area until recently, but its low resistance to disease, especially downy mildew, led to its decline. It has now been replanted in vineyards such as San Cristóbal (Pago de Añina, Jerez), which is recovering 22 historic Andalusian varieties based on Rojas Clemente's essay (1807). Juan Jurado (Agrícola Calcárea) included it in his initial micro-vinifications of recovered varieties.
