Natural sparkling wine and pét-nat

Pét-nat, short for pétillant naturel, is a sparkling wine made by the ancestral method: the wine is bottled before the first fermentation has finished, and the fizz comes from that fermentation finishing in the bottle. It tends to be lighter in alcohol and can be slightly cloudy.

Serve it very cool. Open the bottle with care: the pressure can vary. Any sediment is normal and is not a flaw.
Is pét-nat the same as cava or champagne? No. Cava and champagne have a second fermentation in the bottle with added sugar and yeast; a pét-nat finishes its first fermentation in the bottle.
Why is a pét-nat cloudy? Because it is not usually disgorged or filtered, so the fine sediment stays in the bottle. It is normal.
How should I open it? Chill it well, hold the bottle at an angle and open it slowly.
