Spiral de ViAlessandro Manzoni & Javi Revert
Spiral de Vi is born from the meeting of Javi Revert's wine heritage —old vines and recovered plots in the Valle dels Alforins, in Fontanars dels Alforins— and the joining of Alessandro Manzoni to the project. Natural wine from native Valencian varieties, spontaneous fermentation, minimal intervention. Together they share the same way of understanding viticulture: to keep evolving without ever losing the link with the origin.
Over the years, Javi Revert has gathered a set of vineyards in the Valle dels Alforins that form part of his wine heritage. Some are small plots of old vines; others, vineyards he has recovered and farms directly. The Serra de la Ombría, with its sandy soils and presence of groundwater, is the heart of the project.
Respectful viticulture aimed at obtaining grapes that faithfully express the territory they come from. Minimal-intervention winemaking: spontaneous fermentation, no additives, no corrections. Each reference seeks to show a different expression of the same landscape: the singular plot, the blend of vineyards, the traditional variety set free.
The spiral, constantly present in nature, symbolises continuous growth that always keeps its connection with its starting point. Spiral de Vi is exactly that: a natural evolution built on the experience accumulated vintage after vintage, never breaking the thread with the origin.
The Valle dels Alforins is one of the great wine-growing areas of the Mediterranean. The altitude of its vineyards, the influence of sea breezes and the diversity of its calcareous soils allow a freshness unusual in a Mediterranean climate to be preserved. This balance between ripeness and freshness, together with an extraordinary heritage of traditional varieties, gives rise to wines with an identity deeply tied to their origin.
Three wines, one territory
A single-plot wine made exclusively from Monastrell from a vineyard in the upper part of the Serra de la Ombría. Planted on sandy soils and benefiting from groundwater, this vineyard enjoys especially cool conditions that allow a different expression of Monastrell: finer, more vertical and deeply tied to this landscape.
Cherry-red colour. Nose of fresh red fruit —cherries, strawberries— with a floral and mineral note. Light, very drinkable palate, soft tannins and present acidity. A different Monastrell, without the usual excesses of ripeness of the area, made to preserve the freshness of the Terres dels Alforins.
A valley wine made from different white vineyards of the Valle dels Alforins. It seeks to express the territory's freshest, most luminous profile, respecting the identity of its traditional varieties.
Bright pale yellow colour. Nose of white and yellow flowers, pome fruit and citrus. Fresh, agile palate, good acidity and light salinity. An unconventional blend of four varieties —Macabeo, Merseguera, Malvasia and Chardonnay— in the Terres dels Alforins that combines the freshness of native varieties with the expressiveness of Chardonnay.

I haven't known Alessandro Manzoni for very long, but I have shared wines, tastings and debates with him on several occasions, and I am convinced and certain that the vision of Sandro and Javi Revert go hand in hand. These wines are the certainty that constantly recovering wine heritage symbolises continuous growth. This project represents the natural evolution built on accumulated experience, vintage after vintage.
